Ingredients

1 cup 2% milk + 2 tbsp
1/2 cup brown sugar
7 tbsp butter, softened
2 oz sago pearls (small tapioca)
1/2 tsp vanilla extract
1/2 tsp pumpkin pie spice
1 tsp baking soda
1/4 cup breadcrumbs
1.5 oz mixed dried fruit
1 None egg, lightly beaten
Preparation

Lightly grease a large ramekin with melted butter.
Bring 1 cup milk to a boil. Remove from heat. Add sugar, butter, sago, vanilla and pumpkin pie spice. Cover and set aside for 10 mins. Combine baking soda with remaining milk then add to sago mixture. Combine breadcrumbs and dried fruit then mix in. Add egg and mix until combined.
Transfer to prepared pan and smooth surface. Cover with parchment paper and foil. Put a plate upside down in a large saucepan. Place ramekin on top of plate. Pour enough boiling water in pan to reach two-thirds up side of ramekin. Cover and boil for 2 hours, or until skewer inserted in the center comes out clean.
Carefully remove pudding from water. Let cool for 15 mins then turn out onto a serving plate. Serve.
