Spring Vegetable Tabbouleh - cooking recipe

Ingredients
    2/3 lb bulgur wheat
    3/4 lb frozen peas
    1 None red pepper, deseeded and diced
    1 large tomato, quartered, deseeded and diced
    2 None spring onions, trimmed and finely sliced
    1 None lemon, zest and juice
    3 sprigs flat leaf parsley, chopped, a few leaves reserved for garnish
    2 sprigs mint, a few leaves reserved for garnish
    2 sprigs basil, a few leaves reserved for garnish
    4 tbsp olive oil
Preparation
    Cook the bulgur according to package instructions. Drain and leave to cool. Cook the peas in boiling salted water for about 5 mins, drain and cool under running water.
    To assemble, stir the peas into the bulgur along with the pepper, tomato, spring onions, a little lemon zest and the juice. Add the herbs, some salt and pepper and the oil. Garnish with the reserved herbs.
