Herb And Parmesan Chicken - cooking recipe
Ingredients

1/2 cup chopped flat-leaf parsley
2 tsp dried oregano leaves
1/4 cup shredded Parmesan cheese
1 None egg white, lightly beaten
8 small chicken thighs
1 2/3 lbs small red potatoes, unpeeled, quartered
2 medium red onions, cut into wedges
1 None garlic bulb, top removed
10 oz broccoli, cut into florets

Preheat the oven to 400\u00b0F. Line 2 baking pans with parchment paper. Combine parsley, oregano, Parmesan cheese and egg white in a medium bowl. Using fingertips, make a pocket under chicken skin. Fill pocket with herb mixture. Secure end with toothpicks. Place chicken on one of the prepared pans. Spray with no stick cooking spray.
Place potato, onion and garlic on remaining pan. Spray with cooking spray. Bake both pans, swapping halfway through cooking, for 35-40 mins or until potatoes are tender and chicken is cooked through. Remove toothpicks.
Place broccoli in a medium microwave-safe bowl. Microwave on high (100%) in 1-minute bursts, stirring until just tender. Serve chicken with vegetables.
