Lamington Cakes - cooking recipe
Ingredients

1 cup all-purpose flour
1 1/3 cups shredded coconut
3/4 cup sugar
1/2 cup unsalted butter, melted
1/2 cup strawberry jam
1 cup powdered sugar
2 tbsp cocoa powder

Preheat oven to 400\u00b0F. Line an 8x12 inch jelly roll pan with parchment paper. Combine flour, 1 cup coconut, sugar and melted butter in a medium bowl. Press mixture firmly into base of prepared pan and smooth surface. Bake for 10 minutes or until lightly golden around edges and firm to the touch. Allow to cool for 10 minutes.
Place jam in a medium heatproof bowl. Microwave on high until bubbling and runny. Carefully spread hot jam over base and smooth surface. Stand at room temperature for 10 minutes or until jam sets.
Sift powdered sugar and cocoa powder together into a medium heatproof bowl. Add 2 tablespoons boiling water and stir until smooth. Immediately spread icing evenly over jam, taking care not to disturb jam. Sprinkle with remaining shredded coconut. Chill for 4 hours or firm. Cut into 24 pieces.
