Creamy Tuna Bake - cooking recipe

2 lbs red-skinned potatoes, peeled
2 tbsp margarine or butter
2 tbsp flour
1 cup milk
15 oz can tuna in oil, drained, flaked
1 cup Cheddar cheese, grated
None None salad greens, to serve
Preparation

Preheat oven to 400\u00b0F. Grease a 6 cup baking dish. Cook potatoes in a large saucepan of salted boiling water for 6 mins, until starting to soften. Drain and cool, then slice finely.
Meanwhile, for the tuna mixture, melt margarine in a saucepan on medium-low heat. Add flour and cook, stirring, for 1 min, until mixture bubbles. Gradually whisk in milk. Cook, stirring, for 3-4 mins, until sauce bubbles and thickens. Remove from heat. Stir in tuna and season to taste.
To assemble, arrange 3/4 of potatoes in the base of the prepared dish. Top with tuna mixture and remaining potatoes, overlapping slightly. Bake for 20 mins, then top with cheese and bake for 10 more mins, until golden and bubbling. Season and serve with salad greens.
