Pan-Fried Fish With Japanese Salad - cooking recipe

Ingredients
    3 None carrots, peeled, cut into matchsticks
    1 None cucumber, cut into matchsticks, discard seeds
    2 1/2 inches fresh ginger, peeled, cut into matchsticks
    4 None spring onions, thinly sliced on a bias
    2 sheets nori, thinly sliced
    2 tbsp mirin
    1 tbsp soy sauce
    1 tbsp sesame oil
    1 clove garlic, minced
    4 (6.5 oz) white fish fillets
    2 tbsp sesame seeds, toasted
Preparation
    Toss together carrots, cucumber, ginger, spring onions and nori. Whisk together mirin, soy sauce, sesame oil and garlic. Set aside.
    Lightly coat a frying pan with oil. Cook fish over high heat for 3 mins per side, until browned and just cooked through. Top with salad. Drizzle dressing over top and sprinkle with sesame seeds. Serve.
