Chilled Coffee And Vanilla Rice Puddings - cooking recipe

Ingredients
    2 cups milk
    1/4 cup granulated sugar
    1/2 None vanilla bean, split lengthways, seeds scraped out
    2-3 tsp instant coffee powder
    1/4 lb short grain pudding rice
    1 1/4 cup heavy cream
    1 tsp vanilla extract
    1 1/3 cup applesauce
Preparation
    Bring milk, sugar, vanilla bean and seeds to a boil. Add coffee powder and rice and simmer gently for about 25 mins until rice is tender. Remove from heat, cover and set aside for 10 mins. Remove vanilla bean and let cool for 30-40 mins, stirring occasionally. Whip 1/2 cup heavy cream to soft peaks then fold into warm rice pudding. Divide between 4 serving glasses and chill for 30 mins.
    Whip remaining cream with vanilla extract to soft peaks. Transfer to a piping bag with a large star tip. Pipe swirls on top of each rice pudding then garnish with applesauce. Serve.
