Greek Souvlaki Wraps - cooking recipe
Ingredients

1 1/2 lb lamb leg steaks, trimmed
1-2 tbsp Greek seasoning mix
1-2 tbsp olive oil
3/4 cup Greek yogurt
1 clove garlic, minced
1 tbsp fresh flat-leaf parsley leaves, roughly chopped
2 None Persian cucumbers, quartered lengthwise, deseeded, sliced
2 None tomatoes, cut into wedges, thinly sliced
2 None spring onions, thinly sliced diagonally
4 None pitas, warmed, to serve
None None lemon wedges, to serve
Preparation

Toss lamb with seasoning mix and 1-2 tbsp olive oil. Set aside.
Place yogurt in a small serving bowl. Add minced garlic and mix until combined. Season to taste and set aside.
In a medium bowl, combine parsley, cucumbers, tomatoes and spring onions. Season to taste and set aside.
Heat a grill pan or nonstick frying pan over high heat. Cook lamb for 3-5 mins per side, or until tender and browned. Let rest for 5 mins then slice thinly.
Spread garlic yogurt over pitas. Top with parsley salad and lamb then roll up tightly. Serve with lemon wedges.
