Date Scones With Whipped Vanilla Butter - cooking recipe

Ingredients
    2 1/2 tbsp unsalted butter, softened
    1/4 cup light brown sugar
    1 None large egg yolk
    2 2/3 cups self-rising flour, sifted
    2 oz finely chopped pitted dates
    1 1/4 cups buttermilk, a little reserved for brushing
    -1 None Whipped Vanilla Butter
    12 tbsp unsalted butter, softened
    2 tsp vanilla extract
Preparation
    Preheat oven to 425\u00b0F. Grease an 8 inch square cake pan.
    Beat butter, sugar and egg yolk until light and fluffy. Add flour, dates and buttermilk. Mix until just combined. Turn dough out onto a floured work surface and knead gently until smooth. Press out into an 8 inch square. Cut into 9 squares then cut each square in 1/2 diagonally. Place scones, side-by-side, just touching, in pan. Brush with a little extra buttermilk and bake for 20 mins.
    Meanwhile, to make the whipped vanilla butter, beat butter and vanilla until light and fluffy.
    Serve warm scones with whipped butter.
