Chicken Sushi Sandwich Rolls - cooking recipe

Ingredients
    9 oz chicken breast, thinly sliced
    1 None lemon, zested, plus 2 tbsp juice
    1 clove garlic, minced
    2 tsp olive oil
    1 None avocado, pitted, halved
    1 loaf whole wheat bread, crust trimmed, sliced into 6 lengthwise
    1 small head lettuce
    1 None carrot, peeled, julienned
    12 None green beans, trimmed
Preparation
    In a large bowl, combine chicken, lemon zest, 1 tbsp lemon juice and garlic.
    Heat oil in a frying pan over medium heat. Cook chicken for 3-4 mins, turning, until golden brown and cooked through. Let cool.
    Scoop avocado flesh into a bowl and mash roughly with remaining lemon juice. Spread 1 side of each bread slice with avocado then cut in 1/2. Top with a lettuce leaf, 2 chicken slices, 2 carrot strips and 1 green bean. Roll up to enclose filling and wrap in plastic wrap.
