Endive, Blue Cheese And Prosciutto Salad - cooking recipe

1/2 tbsp canola oil
1 tbsp red wine vinegar
1 oz fresh chives, finely chopped
2 tbsp pumpkin seeds, toasted
3 None heads of endive, halved
4 oz blue cheese, crumbled
6 slices prosciutto
None None crusty bread, to serve
Preparation

For the dressing, place the oil, vinegar and chives in a bowl and whisk to combine. Add the pumpkin seeds and season with salt and pepper.
Arrange the endive, cheese and prosciutto on serving plates and drizzle with the dressing. Season with cracked black pepper and serve with crusty bread.
