Curried Squash With Mushrooms - cooking recipe

Ingredients
    1 tbsp peanut oil
    1 clove garlic, minced
    1 tsp ground cumin
    1 tsp ground caraway
    1 tsp ground nutmeg
    1 tsp mild curry powder
    1/2 tsp ground turmeric
    1 None medium Spanish onion, sliced thinly
    1 None medium carrot, sliced thinly
    10.5 oz yellow squash, quartered
    1 None medium green pepper, sliced thinly
    7 oz button mushrooms, halved
    1 tsp cornstarch
    3/4 cups coconut cream
    1 tbsp fresh cilantro leaves, finely chopped
Preparation
    Heat oil in a wok or large frying pan over medium heat. Stir-fry garlic and spices until fragrant.
    Add onion and carrot. Stir-fry until onion is soft. Add squash, pepper and mushrooms. Stir-fry until tender.
    Mix together cornstarch and coconut cream then stir until mixture boils and thickens slightly. Serve sprinkled with cilantro.
