Tortilla-Crusted Turkey With Rice Salad - cooking recipe

6 oz tortilla chips
4 None turkey breast steaks
1/3 cup flour
3 tsp taco seasoning
2 None eggs, beaten
None None Oil, for shallow-frying
None None FOR THE SALAD
2 cups cooked rice
1 None tomato, chopped
1 None avocado, peeled, pitted and chopped
2 None green onions, sliced
1 None lime, peel finely grated and lime juiced
None None Tabasco sauce, to taste
Preparation

Process tortilla chips to crumbs. Place turkey steaks between 2 sheets plastic wrap and pound with a rolling pin until 1/4-inch thick.
Mix flour with 2 tsp taco seasoning. Dust turkey in seasoned flour, shaking off excess. Dip in egg. Roll in tortilla crumbs to coat.
Heat oil in a large skillet on high heat, until a few crumbs sizzle as soon as they're added. Cook turkey for 2-3 mins each side, until crisp and golden. Drain on paper towels.
Meanwhile, for the salad, combine all ingredients in a large bowl. Serve turkey with salad and lime wedges.
