Steaks With Pea Pilaf And Yogurt Sauce - cooking recipe

2 tbsp butter
1 None brown onion, thinly sliced
1 clove garlic, crushed
4 oz basmati rice
1/2 cup low-sodium chicken stock
3 oz frozen peas
1 tbsp vegetable or olive oil
2 tsp ground cumin
4 None thin beef steaks, about 3 oz each
1/3 cup Greek-style plain yogurt
1 tbsp lemon juice
1 tbsp finely chopped mint
Preparation

For the pilaf, melt butter in a medium saucepan over moderate heat. Add onion and cook, stirring, 7 mins, or until golden. Add garlic and rice and cook, stirring, 1 min. Add stock and bring to a boil. Reduce heat to low and cover. Simmer 12 mins, or until liquid is absorbed. Add peas and stir to combine. Remove pan from heat and let stand 5 mins, without lifting lid.
Meanwhile, for the steaks, heat oil in a frying pan over high heat. Sprinkle cumin on steaks and cook 30 seconds on each side, or until cooked to your liking.
For the sauce, place yogurt, lemon juice, half the mint and 2 tbsp water in a bowl and stir to combine.
Serve pilaf topped with steaks, yogurt sauce and remaining mint.
