Apple Turnovers - cooking recipe

1 cup canned apple pie filling
1/4 cup dried currants
2 tbsp light brown sugar
1/4 tsp mixed spice, such as pumpkin pie spice
4 sheets frozen puff pastry, thawed
1 None egg, lightly beaten
2 tsp demerara sugar
Preparation

Preheat the oven to 425\u00b0F. Grease 2 baking pans and line with parchment paper.
Combine the apple pie filling, currants, brown sugar and spice in medium bowl.
Using 3 1/4-inch cutter, cut nine rounds from each pastry sheet. Place a rounded teaspoon of the apple mixture on each round. Fold to the enclose filling, pinching the edges to seal. Place the turnovers on the prepared pans. Brush with egg and sprinkle with demerara sugar.
Bake for about 20 mins or until golden brown.
