Carrot Cake With Raisins - cooking recipe

1 cup self-rising flour
1/2 cup all-purpose flour
5.25 oz grated carrot
1/2 cup raisins
2/3 cup honey, warmed slightly
1/2 cup canola oil
3 None eggs
1 None orange, zested
Preparation

Preheat oven to 350\u00b0F. Lightly grease and line a 7x11 inch jelly roll pan with parchment paper.
Sift flour into a bowl. Add grated carrot and raisins. Whisk together honey, oil, eggs and orange zest then mix into dry ingredients until just combined. Transfer to prepared pan and bake for 25-30 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer a wire rack and carefully remove parchment paper. Let cool completely then cut into squares.
