Ginger Chicken Noodles - cooking recipe

Ingredients
    2 None chicken breasts, halved horizontally
    9 oz soba noodles, cooked
    5.25 oz snow peas, trimmed, sliced
    1 None carrot, peeled, julienned
    2 stalks celery, julienned
    3 None spring onions, sliced
    None None Dressing
    2 tbsp avocado oil
    2 tbsp soy sauce
    2 tbsp rice wine vinegar
    2 tbsp pickled ginger, finely shredded
    1 tsp wasabi paste
    1 tsp sesame oil
    None None fresh cilantro leaves, to serve
Preparation
    Heat a large frying pan over high heat. Lightly coat chicken with olive oil and season. Cook for 2-3 mins per side, or until cooked through. Let cool slightly then slice into strips. Combine with noodles and vegetables.
    Meanwhile, to make the dressing, whisk together all ingredients. Drizzle 1/2 over chicken salad and toss to combine. Drizzle remaining dressing over top and sprinkle with cilantro to serve.
