Pickled Herring With Butter Fried Potatoes - cooking recipe

Ingredients
    2 cups white wine vinegar
    4 tbsp sugar
    3 None bay leaves
    2 tbsp mustard seeds
    1 tbsp black peppercorns
    5 None onions, 4 peeled and cut into rings, 1 peeled and diced
    12 None fresh herring, gutted and without heads
    1 1/4 cups all-purpose flour
    1/2 cup oil
    3 1/3 lbs new potatoes
    3 tbsp butter
    None None dill, for garnish
Preparation
    To make the pickling mixture, bring 2 cups of water, vinegar, 1 1/2 tsp of salt, sugar, bay leaves, mustard and peppercorns to the boil in a pot. Simmer for 5 mins, add the onion rings and cook for another 2-3 mins. Leave to cool.
    Wash and dry the herring and season them well with salt, inside and out. Coat the fish in flour. Heat the oil in a frying pan and fry the herring, turning as necessary until golden brown. Put them in a bowl and let them cool. Pour over the pickling mixture until the herring are covered. Cover and put in the fridge for at least 24 hours.
    Cook the potatoes in boiling water for about 20 mins. Drain them, rinse them in cold water and remove the skins. Let the potatoes cool and slice them. Heat the butter in a frying pan and fry the potatoes, turning as necessary. Add the diced onion and fry them until soft. Season to taste and serve the potatoes and herring, garnished with dill.
