Crab And Soba Noodle Salad With Ginger Miso Dressing - cooking recipe

Ingredients
    10 oz soba noodles
    1 None small cucumber, seeded, thinly sliced
    1 None small red onion, finely chopped
    1 None medium carrot, peeled, cut into matchsticks
    2 oz baby spinach, thinly sliced
    1 lb fresh crab meat
    None None Ginger Miso Dressing
    2 inches fresh ginger, peeled, coarsely chopped
    2 tbsp pickled ginger, plus 1 tbsp to garnish
    2 cloves garlic, peeled
    3.5 oz yellow miso paste
    1/2 tsp wasabi paste
    1/2 cup rice vinegar
    1/2 cup vegetable oil
Preparation
    Cook noodles in boiling salted water until just tender. Drain then rinse under cold water. Drain again then toss with cucumber, onion, carrot and spinach. Add 1/2 the crab. Set aside.
    For the ginger miso dressing, combine all ingredients with 2 tbsp water in a blender. Puree. Add 1/2 to salad and toss to combine.
    Distribute salad between serving plates and top with remaining crab and dressing. Garnish with pickled ginger. Serve.
