Loukaniko Sausage And Feta Tarts - cooking recipe

Ingredients
    1 1/2 sheets frozen puff pastry, thawed
    1 tbsp olive oil
    4 1/2 oz thinly sliced loukaniko Greek sausage
    1 None leek, thinly sliced
    1 clove garlic, minced
    1/2 cup frozen peas
    6 large eggs, lightly beaten
    2 oz feta, crumbled
    None None Salad, to serve
Preparation
    Preheat oven to 400\u00b0F. Place a baking sheet on middle rack to preheat. Grease 6 cups of a large muffin pan.
    Cut pastry into 6 equal squares. Line each muffin cup with a pastry square. Place on baking sheet in oven; bake 4-5 minutes, until golden.
    Meanwhile, in a large skillet, heat oil on high. Cook sausage and leek 2-3 minutes, until leek is tender. Add garlic; cook 30 seconds. Stir in peas. Cool slightly.
    Divide leek mixture among pastry shells. Fill evenly with egg; season to taste. Top with feta.
    Reduce oven to 250\u00b0F.
    Bake tarts 15-20 minutes, until set in center. Serve warm or cold with salad.
