Citrus Souffle - cooking recipe
Ingredients

2 tbsp butter
1/4 cup granulated sugar, plus additional, for sprinkling
1 None lemon, peel finely grated
1 None lime, peel finely grated
2 tbsp flour
1 tbsp lemon or lime juice
1 cup milk
2 None eggs, separated
2 None egg whites
None None Powdered sugar, for dusting
Preparation

Preheat the oven to 375\u00b0F. Lightly grease four 3/4-cup souffle dishes. Sprinkle each with a little granulated sugar. Place on a baking pan.
Beat butter, granulated sugar and citrus peels in large bowl with an electric mixer until creamy. Stir in flour and juice.
Bring milk to a boil in a medium saucepan. Whisk into butter mixture. Stir on low heat until the mixture boils and thickens. Whisk in egg yolks and cool slightly.
Beat egg whites in a clean bowl with electric mixer until soft peaks form. Fold lightly into citrus mixture. Spoon into souffle dishes.
Bake for 15-20 mins, or until puffed and golden. Dust with powdered sugar and serve immediately.
