Tex Mex Pasta Salad - cooking recipe

Ingredients
    1 None lime, zested and juiced
    3/4 cup Italian dressing
    1/4 cup chopped fresh cilantro
    1 tbsp minced garlic
    2 tsp Dijon mustard
    2 tsp honey mustard
    1/2 tsp ground cumin
    8 oz spiral pasta
    4 cups chopped romaine lettuce
    1 cup cooked black beans
    1 cup cooked corn kernels
    2 None large tomatoes, chopped
    1/2 cup sliced black olives
    1/2 cup chopped red onion
    1/2 cup finely shredded Cheddar or Monterey Jack cheese
    1 None small jalapeno pepper, sliced into rounds
    1 bag tortilla chips
Preparation
    In a small bowl, whisk together 1/2 tsp lime zest, 1 tbsp lime juice, Italian dressing, cilantro, garlic, mustard and cumin. Season.
    Meanwhile, cook pasta in boiling salted water until al dente. Let cool then toss with 1/2 the vinaigrette mixture. In a large serving bowl, layer lettuce and pasta. Sprinkle with black beans, corn, tomatoes, olives, onions, cheese and jalapeno. Arrange tortilla chips around the bowl. Serve with remaining dressing.
