Ingredients

4 1/2 tbsp butter, softened
1 1/3 cup all purpose flour
1/3 cup sugar
2 cups 2% milk
1 tsp vanilla extract
1 None egg
2 1/2 tbsp cornstarch
1 lb cherries, pitted
Preparation

In a bowl, mix together the butter, flour, 2 tbsp of sugar, a pinch of salt and 1-2 tbsp cold water. Knead into a smooth dough, wrap in plastic wrap and refrigerate for 30 minutes.
Heat oven to 400\u00b0F. In a saucepan, mix together the milk, vanilla extract, egg, cornstarch and 2 tbsp of sugar. Simmer and stir over a low heat for about 1 minute and set aside.
Roll the dough out on a floured surface to about 10 inch diameter and place in a greased 9 inch tart pan. Press into the corners, cut off the edges and prick the base several times with a fork.
Add the milk mix into the tart base and scatter the cherries over the top. Bake on the bottom of the preheated oven for 1 hour and 10 minutes. Allow to cool for 10 minutes before serving.
