Feta, Sweet Corn And Kidney Bean Salad - cooking recipe
Ingredients

4 tbsp white wine vinegar
1 None lime, zested and juiced
1 pinch chili flakes
3 tbsp olive oil
1 head romaine lettuce, sliced and outer leaves discarded
1 - 15 oz can sweet corn, drained
1 - 15 oz can kidney beans, drained and rinsed
4 None tomatoes, diced
2 None red onions, finely diced
1/3 lb feta, chopped
None None fresh parsley, to garnish
Preparation

Mix the vinegar, lime zest, lime juice and chili flakes together and season. Gradually beat in the oil until fully combined. Mix the lettuce, sweet corn, kidney beans, tomatoes, onions and feta together and drizzle with the dressing. Serve in a large bowl and garnish with parsley.
