Beef Salad With Blue Cheese Dressing - cooking recipe

1/4 cup olive oil
2 cloves garlic, minced
1/4 cup orange juice
2 oz blue cheese, crumbled

1 lb baby new potatoes, quartered
1 tbsp olive oil
1 (18 oz) beef tenderloin, cut into 4 medallions
10.5 oz green beans, trimmed, halved crosswise
7 oz cherry tomatoes, halved
3.5 oz baby arugula
Preparation

To make the blue cheese dressing, whisk together olive oil, garlic, orange juice and blue cheese. Set aside.
Preheat oven to 425\u00b0F. Arrange potatoes, in a single layer, in a large shallow baking dish and drizzle with oil. Roast for 20 mins, or until golden brown and tender.
Oil a grill pan and place over high heat. Sear beef until browned on both sides and cooked to your liking. Cover and let rest for 5 mins. Slice thinly
Meanwhile, boil, steam or microwave green beans until just tender. Drain.
Combine beef, green beans and potatoes in a large serving bowl. Add tomatoes and arugula and drizzle with dressing. Toss gently to combine. Serve immediately.
