Turkey With Stilton And Walnuts - cooking recipe

Ingredients
    4 None turkey breast fillets (6 oz each)
    4 oz Stilton cheese, crumbled
    2 tbsp chopped walnuts
    2 tsp fresh chopped thyme
    8 slices prosciutto
    2-3 tbsp olive oil

    2/3 cup red wine
    2/3 cup red currant jelly
    3 tbsp port
    1 tbsp juniper berries
    1 tbsp fresh thyme leaves
Preparation
    Make a deep horizontal cut along each turkey fillet to form a pocket. Mix the Stilton cheese, walnuts and thyme; season with freshly ground black pepper. Fill turkey fillets with stuffing. Wrap 2 slices of prosciutto around each turkey fillet.
    Heat the oil in a large skillet on medium heat. Cook the turkey fillets for 15-20 mins, turning occasionally, until just cooked through.
    Meanwhile, for the gravy, add all the ingredients to the skillet. Stir until well blended. Reduce heat to low; simmer for 8-10 mins, spooning the gravy over the turkey.
