Chicken, Broccoli And Bacon Casserole - cooking recipe

Ingredients
    4 None chicken breasts
    1 tsp dried thyme
    4 slices bacon
    2-3 tbsp oil
    1 None onion, diced
    1 tbsp all-purpose flour
    1 cup dry white wine
    3/4 cup chicken stock
    3/4 cup heavy cream
    1 tbsp tomato paste
    1 1/2 lb broccoli, cut into florets, blanched in boiling water for 2 mins then drained
    1/4 lb Cheddar cheese, grated
Preparation
    Preheat the oven to 325\u00b0F. Grease a baking dish with oil. Season the chicken and sprinkle with thyme. Wrap each chicken breast in a slice of bacon. Heat the oil in a large, non-stick frying pan, add the chicken and sear for 3-4 mins, turning. Remove from the pan and place in the baking dish.
    Add the onion to the pan and saute for 3-4 mins until just soft. Sprinkle in the flour and mix well. Whisk in the wine, stock, cream and tomato paste and simmer, stirring, until thickened. Arrange the broccoli around the chicken in the baking dish and pour the sauce over the chicken and broccoli. Sprinkle the dish with cheese then bake for 30-40 mins. Serve.
