Bacon And Cabbage Tart - cooking recipe

Ingredients
    1 lb green cabbage, shredded
    1/2 tsp salt
    1 2/3 cups flour
    7 tbsp butter, cut into pieces
    1 medium egg yolk
    3 oz bacon, diced
    2 None onions, chopped
    1 cup dry white wine
    1/4 tsp grated nutmeg
    1 tsp cumin seeds, lightly crushed
    1/4 lb seedless green grapes, halved
    3 medium eggs
    1 cup sour cream
Preparation
    Mix the cabbage and salt in a bowl and let stand for 1 hour.
    For the pastry, put the flour and butter in a bowl and rub together with your fingertips until the mixture resembles coarse crumbs. Add the egg yolk and 1 tsp water and mix into a dough. Wrap in plastic wrap and chill for 30 mins.
    Preheat the oven to 375\u00b0F. Roll out the pastry on a floured surface and transfer to a 12 x 4 inch rectangular baking dish. Trim off the excess pastry around the edges, line with parchment paper and fill with dry beans. Bake for 20 mins, then remove the paper and beans.
    For the cabbage mixture, fry the bacon in a dry pan for 3 mins. Add the onions and saute for 3 mins. Add the cabbage and saute 2 more mins, then stir in the wine, nutmeg and cumin and cook gently for 10 mins. Leave to cool.
    Spread the cabbage mixture on the pastry base and dot with grapes. Beat the eggs with the sour cream and spread on top of the cabbage. Bake for about 35 mins or until the filling is lightly set. Serve warm.
