Wild Rice, Apple And Fennel Salad - cooking recipe

Ingredients
    3/4 cup wild rice
    4.25 oz halloumi cheese, broken into pieces
    1 None apple, cored
    1 small bulb fennel, tips reserved
    1/2 None lemon, zested, juiced
    1 tbsp walnut oil
    1/2 tbsp apple cider vinegar
    2 tbsp fresh orange juice
    1 bunch chives
    1 oz walnuts, roughly chopped
Preparation
    Cook rice according to package directions. Rinse under cold water, drain, spread on a baking sheet and place in the refrigerator to cool completely.
    Preheat the oven to 475\u00b0C. Place halloumi onto a lightly greased baking sheet and bake for 10 mins or until golden.
    Finely slice apple and fennel bulb and place in large bowl of iced water with lemon juice and zest to prevent discoloration.
    To make dressing, combine walnut oil, vinegar, orange juice, chives and walnuts in a large bowl. Drain the apple and fennel, add to the bowl of dressing with the rice, halloumi and fennel tips and toss to combine. Season to taste and serve.
