Spiced Orange And Almond Pilaf - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None large onion, finely chopped
    1 tsp turmeric
    1/2 tsp ground cumin
    1/2 tsp smoked paprika
    3.5 oz basmati rice
    3 cups vegetable or chicken stock
    1 (13.5 oz) can chickpeas, drained, rinsed
    3 oz baby spinach
    1 None orange, zested and flesh chopped
    1/3 cup currants
    1/3 cup sliced almonds, toasted
Preparation
    Heat oil in a medium saucepan over high heat. Saute onion for 8-10 mins, until golden brown. Stir in spices and cook for 30 seconds, or until fragrant. Mix in rice, stirring, for 1-2 mins until coated in spices. Add stock and bring to a boil. Reduce heat to low and simmer, covered, for 12-15 mins, until stock is absorbed.
    Remove from heat and stir in chickpeas, spinach, orange zest, orange flesh and currants. Serve sprinkled with almonds.
