Baked Pasta Bolognese - cooking recipe

Ingredients
    1 tbsp vegetable or olive oil
    1 None medium onion, finely chopped
    2 cloves garlic, minced
    1 lb ground beef
    4 tbsp tomato paste
    3 cups tomato puree
    8.75 oz large pasta shapes, such as spirals
    2 None eggs, lightly beaten
    7 oz mozzarella cheese, grated
    1 None large tomato, sliced
    None None arugula salad, to serve
Preparation
    Preheat oven to 425\u00b0F. Grease and line an 8 inch springform pan with parchment paper.
    Heat oil in a large pan over medium-high heat. Add onion, garlic and ground beef. Cook, stirring, for 5 mins, or until beef is browned. Add tomato paste and cook, stirring, for 2 mins. Add tomato puree and simmer, uncovered, stirring occasionally, for 12-15 mins, or until sauce thickens.
    Meanwhile, cook pasta in boiling salted water for 10-12 mins, or until al dente. Drain.
    Toss pasta with eggs, ground beef mixture and 1/2 the mozzarella. Season. Transfer to prepared pan. Press mixture firmly into pan. Arrange sliced tomato over top then sprinkle with remaining mozzarella. Bake for 20-25 mins, or until cheese is melted and golden.
    Let cool in pan for 15 mins then cut into wedges and serve with arugula salad.
