Mushroom And Spinach Quiche - cooking recipe

Ingredients
    2 sheets frozen puff pastry, thawed
    1 tbsp vegetable or olive oil
    2 None spring onions, thinly sliced
    8.75 oz button mushrooms, thickly sliced
    1 clove garlic, minced
    3.5 oz baby spinach
    6 None eggs
    1/3 cup heavy cream
    2 oz feta cheese, crumbled
Preparation
    Preheat oven to 400\u00b0F. Grease a 10 x 6 inch rimmed baking tray. Line with puff pastry, cutting to fit. Prick base with a fork. Line with parchment paper, add pie weights and bake for 8 mins, or until just colored. Remove weights and parchment paper and let cool.
    Meanwhile, heat oil in a frying pan over high heat. Add onion, mushroom and garlic and cook for 5 mins, or until soft. Remove from heat. Add spinach and stir until wilted. Transfer to tart shell. Whisk eggs and cream. Season then pour over spinach mixture. Sprinkle with feta cheese and bake for 12 mins, or until browned and just set. Let cool in pan for 5 mins. Serve.
