Herb And Goat Cheese Tarts - cooking recipe

2 tbsp butter
1 tbsp olive oil
2 None large onions, thinly sliced
1 clove garlic, crushed
2 None medium eggs
1/4 cup cream
2 tsp tarragon, finely chopped
4 oz goat cheese, crumbled

1 cup all purpose flour
9 tbsp cold butter, chopped
2 tbsp chilled water
Preparation

Preheat the oven to 400\u00b0F. Lightly grease (4) 4 inch tart pans.
In a large frying pan, heat butter and oil together on high. Saute onion and garlic 4-5 mins, until caramelized. Set aside.
To make the crust, combine flour and butter in a food processor. Pulse until crumbs form. With motor running, gradually add water, until mixture comes together around blade. Remove, and form into a ball. Wrap in plastic wrap and chill for 20 mins.
Roll out dough between 2 sheets of baking paper until 3mm thick. Using a 5 inch cutter, cut out 4 circles. Ease into pans, trimming edges. Arrange on baking tray and chill for 10 mins.
Line crusts with baking paper and dried beans. Bake blind 10-12 mins, until golden. Remove paper and beans. Bake, uncovered, 4-5 mins. Reduce oven to 350\u00b0F.
In a large bowl, whisk together eggs, cream and tarragon. Season to taste. Divide onion between tarts. Pour egg mixture over and top each with goat cheese. Bake 12-15 mins, until just set.
