Tortellini Alla Boscaiola - cooking recipe

Ingredients
    22 oz fresh veal tortellini
    2 tbsp olive oil
    2 1/2 tbsp butter
    7 oz ham, thinly sliced
    5.25 oz mushrooms, sliced
    2 cloves garlic, minced
    1/2 cup white wine
    3/4 cup heavy cream
    2 oz Parmesan cheese, grated + extra, to serve
    None None fresh parsley, roughly chopped, to serve
    None None mixed greens, to serve
Preparation
    Cook pasta in boiling salted water until al dente. Drain.
    Meanwhile, heat oil and butter in a large frying pan over high heat. Saute ham, mushrooms and garlic for 3-4 mins, until ham is crispy and mushrooms are tender. Add wine and simmer for 2-3 mins, until almost evaporated. Add tortellini, cream and cheese and toss to combine. Season.
    Sprinkle with parsley and extra parmesan. Serve with mixed greens.
