Bitter Lettuce Salad With Cheese & Walnut Rolls - cooking recipe

Ingredients
    3 tbsp sugar
    100 g walnuts
    200 g cream cheese
    1/2 tsp paprika
    1 clove garlic, peeled and chopped finely
    3 tbsp light balsamic vinegar
    2-3 tsp wine jelly
    1 tsp mustard
    2 tbsp sunflower oil
    4 tbsp walnut oil
    1/4 bed cress, chopped
    4 stalks chervil, chopped
    100 g frisee lettuce, chopped
    100 g rocket, chopped
    100 g radicchio, chopped
Preparation
    Bring the sugar to a boil with a little water in a saucepan and stir until it starts to caramelize. Stir in the walnuts and caramelize until they're golden brown. Cool the walnuts on a shallow dish lined with parchment or wax paper.
    Mix the cream cheese with the paprika and season to taste. Form the mixture into 8 egg-shaped balls, cover and chill.
    For the dressing: puree the jelly, mustard, vinegar and garlic and stir in the oil. Season to taste and stir in the chervil.
    Put the walnuts in a plastic bag and finely crush them with a rolling pin. Pour them out onto a shallow dish and roll the cream cheese balls in the nuts until they're covered. Toss the lettuce with the dressing and serve on 4 plates.
