Pork Tenderloin With Gnocchi And Mustard Sauce - cooking recipe

2-3 tbsp oil
1 lb pork tenderloin, cut into 4 medallions
1/2 bunch scallions, finely sliced
3/4 cup apple juice
2/3 cup vegetable stock
2/3 cup sour cream
2 tbsp wholegrain mustard
2 tbsp butter
1 lb packaged gnocchi
Preparation

Heat the oil in a large pan over high heat and sear the pork for about two minutes on each side. Season with salt and black pepper, remove from the pan, and keep warm.
Set aside 2 tbsp of the scallions for garnish and saute the remainder in the same pan over medium-high until softened. Add the apple juice and stock to deglaze the pan and remove any brown bits and bring to a boil. Stir in the sour cream and mustard and bring to a boil. Reduce heat and simmer for 3 minutes. Season with salt and black pepper.
Melt the butter in a separate pan and saute the gnocchi for 5 minutes then add to the sauce. Spoon on to plates along with the pork and sprinkle with reserved scallions.
