Apple And Pine Nut Cake - cooking recipe

Ingredients
    150 g plain flour
    1 tsp baking powder
    110 g caster sugar
    2 large eggs, lightly beaten
    125 g unsalted butter, melted
    4 None medium unpeeled golden delicious apples, cored, thinly sliced
    120 g pine nuts
    1 None lemon, grated rind
    None None icing sugar, to dust
    None None mascarpone, to serve
Preparation
    Preheat oven to 180\u00b0C./ 160\u00b0C. fan. Gas mark 4. Lightly grease a 20cm springform pan and dust with flour.
    Sift flour and baking powder together into a bowl. Stir in sugar. Make a well in centre and add eggs and melted butter. Stir, gradually incorporating flour, to make a thick batter.
    Fold in 1/4 of the sliced apple, and 1/2 of the pine nuts and lemon rind. Spoon into prepared pan. Arrange remaining sliced apple on top of cake and sprinkle with remaining pine nuts. Bake for 1 hour 5 minutes, covering with brown paper bag or foil if cake is browning too much, until a skewer inserted comes out clean.
    Cool cake in pan for 10 minutes before transferring to a serving platter to cool completely. Dust with icing sugar and serve with mascarpone.
