Turkey Meatloaf With Strawberry Salsa - cooking recipe

Ingredients
    1 None slightly stale bread roll, torn into small pieces and soaked in cold water
    1 kg minced turkey breast
    1 None egg
    30 g fresh flat-leaf parsley, finely chopped
    3 None onions, peeled and finely diced
    200 g feta, diced
    500 g ripe strawberries, 1/2 pureed, 1/2 finely diced
    3 tbsp white wine vinegar
    3 tbsp olive oil
    6 sprigs fresh thyme, finely chopped
Preparation
    Preheat oven to 325\u00b0F. Line a baking sheet with parchment paper. Squeeze out bread then mix with turkey, egg, parsley and 1 onion. Season then add cheese and shape into a loaf. Transfer to prepared pan and bake for 1 hour.
    For the strawberry sauce, mix strawberry puree with diced strawberries, vinegar, oil, thyme and remaining onions. Season and add a pinch of sugar. Serve with turkey meatloaf.
