Chicken With Tomato And Bean Stew - cooking recipe

2 tbsp oil
1 None onion, chopped
2 cloves garlic, crushed
2 None tomatoes, diced
1/4 cup tarragon leaves
1 can (15 oz) cannellini beans, drained and rinsed
1 lb chicken tenders
None None Steamed baby potatoes, to serve
Preparation

Heat 1 tbsp of the oil in a medium saucepan on medium heat. Cook the onion for 5 mins, until soft. Add the garlic, tomato, tarragon and 1/2 cup water. Simmer for 5 mins, until the tomato softens.
Add the cannellini beans and simmer for 1 min, until heated through. Season to taste.
Meanwhile, heat the remaining 1 tbsp oil in a nonstick skillet on medium heat. Cook the chicken for 3 mins each side, until browned and cooked through.
Spoon the tomato and bean mixture onto serving plates and top with the chicken. Serve with steamed baby potatoes.
