Apple Caramel Puddings - cooking recipe

Ingredients
    5 oz stewed apples or pears, mashed
    1/2 cup self-rising flour, sifted
    1/4 cup brown sugar
    1/4 cup sweetened condensed milk
    1/4 cup sour cream
    1 None medium egg, plus 2 medium egg yolks
    1 tsp vanilla extract
    None None custard or heavy cream, to serve
Preparation
    Combine flour and brown sugar in a large bowl. Mix together apples, condensed milk, sour cream, egg, egg yolks and vanilla until combined. Add to dry ingredients and mix until combined. Distribute between 4 greased ramekins and cover with foil. Place on a rack or trivet inside a pressure cooker.
    Add enough water to come 1/4 of the way up the sides of ramekins. Close pressure cooker and bring up to pressure following manufacturer's instructions. Reduce heat to low to stabilize pressure and cook for 25 mins. Release pressure immediately then remove lid.
    Remove puddings from cooker. Uncover and invert onto serving dishes. Serve with custard or heavy cream.
