Creamed Spinach And Sweet Potato - cooking recipe
Ingredients

2 tsp butter
1 tsp olive oil
1 medium onion, finely chopped
1 pkg (16 oz) frozen spinach, thawed and squeezed dry
1 1/4 cups heavy cream
3/4 cup milk
1 1/3 lbs sweet potatoes, peeled and thinly sliced
1 1/3 lbs potatoes, peeled and thinly sliced
1/3 cup grated Parmesan cheese

Preheat the oven to 424\u00b0F. Oil a deep 13 x 9-inch baking dish.
Melt butter and oil in large skillet on medium heat. Cook onion until soft. Add spinach, half of the cream and 1/2 cup of the milk; cook, stirring for 2 mins.
Place a third each of the sweet potato and potato, slightly overlapping, in dish. Spread with half the spinach mixture. Repeat layering, ending with sweet potato and potato. Pour remaining combined cream and milk over the top. Sprinkle with cheese.
Bake, covered, for about 1 hour or until potato is tender. Uncover and bake for a further 10 mins or until lightly browned.
