Nutty Toffee Apples - cooking recipe

Ingredients
    6 None Cox, or other small, flavorful apple variety
    1 1/4 cups sugar
    2 tbsp butter
    2 tbsp golden syrup, or 1 tbsp honey mixed with 1 tbsp corn syrup
    4 tbsp finely chopped mixed nuts
    6 None wooden popsicle sticks
    None None Candy thermometer
Preparation
    Push the sticks into the apples at the base. Place the sugar and 1/2 cup water in a saucepan and heat gently until the sugar is dissolved. Add the butter and syrup and bring to a boil.
    Continue to boil without stirring until the thermometer reads 340\u00b0F. Remove from the heat and stir in the nuts. Carefully dip the apples into the toffee, making sure they are well coated. Set on silicone mat or parchment to cool and harden.
