Chive Potato Pancakes - cooking recipe

Ingredients
    1 1/4 lb potatoes, peeled, coarsely grated
    3 tbsp fresh chives, finely chopped
    1/2 cup sour cream
    2 tbsp olive oil
Preparation
    Preheat oven to 350\u00b0F. Press grated potatoes between layers of paper towels to remove as much moisture as possible.
    Combine grated potatoes, chives and sour cream in a large bowl. Shape into 8 - 3 inch patties.
    Heat oil in a large frying pan over medium-high heat. Working in batches, cook patties until browned on both sides. Arrange in a single layer on prepared tray and bake for 20 mins, or until cooked through.
