Warm Pear And Blue Cheese Salad - cooking recipe

Ingredients
    2 tbsp butter
    2 tbsp olive oil
    3 None pears, each cut into 8 wedges
    6 oz soft blue cheese, such as bleu d'auvergne or gorgonzola, sliced
    6 oz red cabbage, shredded
    7 oz mixed greens
    None None DRESSING
    3 tbsp olive oil
    2 tbsp red wine vinegar
    1 tsp Dijon mustard
Preparation
    Heat butter and oil in a large frying pan. Cook pears over medium-high heat for 3-4 mins, until golden brown. Drain on paper towels then transfer to a large bowl and toss with cheese. Set aside.
    Add red cabbage to pan juices and cook over high heat for 2-3 mins, until beginning to soften. Add to pears along with mixed greens. Toss to combine then distribute between 4 serving plates.
    For the dressing, whisk together olive oil, vinegar and mustard. Drizzle over salad to serve.
