Sticky Black Rice With Coconut - cooking recipe

Ingredients
    7 oz black glutinous rice
    1 None vanilla pod, split lengthwise, seeds scraped
    2 None whole star anise pods
    2 None cinnamon sticks
    4 None kaffir lime leaves
    1 cup sugar
    1 1/2 cups coconut milk
    2 tbsp fresh shaved coconut
    1/2 None small small pineapple, peeled, thinly sliced
    1 tbsp mint, finely shredded
Preparation
    Place rice in a medium bowl. Cover with water and let stand at least 4 hours. Drain. Combine rice and 3 cups water in a medium saucepan. Add vanilla pod and seeds, star anise, cinnamon and lime leaves. Bring to a boil over high heat. Reduce heat to low. Simmer, uncovered, stirring occasionally, 25 mins, until rice is almost tender. Stir in sugar and cook, stirring occasionally, 5 mins, until sugar has dissolved and rice is tender. Remove from heat and cool slightly. Using tongs, remove and discard vanilla pod, star anise, cinnamon and lime leaves.
    Spoon rice into serving bowls and drizzle with coconut milk. Serve topped with coconut, pineapple and mint.
