Salmon And Coconut Stir Fry - cooking recipe

Ingredients
    1 tbsp oil
    1/2 lb leek, trimmed and sliced
    1 None red pepper, deseeded and diced
    1 None garlic clove, crushed
    1/3 in piece ginger, peeled and grated
    1 lb salmon fillet, cut into cubes
    1/2 cup whipping cream
    1/2 cup coconut milk
    None None Parsley, to garnish
Preparation
    Heat the oil in a wok over a medium-high heat. Add the leek and pepper then stir in the garlic and ginger. Saute for 2-3 mins. Season.
    Add the salmon, cream and coconut milk to the wok and simmer for 4-5 mins, until the fish is cooked through. Garnish with parley before serving.
