Rustic Minestrone Soup - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None leek, sliced
    1 None red onion, sliced
    2 None carrots, peeled, halved and sliced
    2 stalks celery, sliced
    2 None potatoes, peeled and diced
    1 None zucchini, quartered and sliced
    None Handful mushrooms, sliced
    4 cups stock
    1 x 14 oz can chopped tomatoes
    2.5 oz tubetti pasta
    1 x 14 oz can cannellini beans, drained and rinsed
    5.5 oz cooked ham, shredded
Preparation
    Heat oil in a saucepan, add vegetables and gently saute for 5 mins.
    Add stock and tomatoes and bring to a boil. Turn down heat and simmer gently for 20 mins. Add pasta and simmer for 10 mins. Add cannellini beans and ham and heat through. Ladle into bowls and serve.
