Apple And Spice Cake - cooking recipe

Ingredients
    8 tbsp (1 stick) butter, chopped, at room temperature
    2/3 cup firmly packed brown sugar
    1 tsp vanilla extract
    2 None eggs
    2 1/3 cups self-rising flour
    1 tsp mixed spice, such as pumpkin pie spice
    3/4 cup sour cream
    2 tbsp milk
    2 None apples, peeled, cored and thinly sliced
    1 tbsp granulated sugar
    1/2 tsp ground cinnamon
    None None Whipped cream, to serve (optional)
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease and line an 11 x 7-inch baking pan.
    Beat butter, brown sugar and vanilla in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition.
    Fold in combined sifted flour and spice alternately with combined sour cream and milk, beginning and ending with flour mixture.
    Spoon mixture into prepared pan, smoothing top. Arrange apples over cake. Sprinkle evenly with combined sugar and cinnamon.
    Bake 35-40 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Cut into squares to serve. Serve with whipped cream, if desired.
