Fava Bean And Zucchini Salad - cooking recipe

Ingredients
    12 oz fresh fava beans, removed from pods
    4 tbsp olive oil
    4 None zucchini, thickly sliced diagonally
    1 tbsp white wine vinegar
    1/4 cup chopped walnuts
Preparation
    Cook the fava beans in a saucepan of boiling water for 2-3 mins, until tender. Drain and quickly plunge into a bowl of iced water to prevent further cooking. Set aside to cool. Drain and peel off the outer skins.
    Heat 1 tbsp of oil in a large skillet on medium heat. Cook the zucchini, stirring occasionally, for 5 mins, until tender and slightly browned. Add the fava beans and season. Cook for 1 min, until heated through.
    Whisk the vinegar and remaining 3 tbsp oil in a small bowl. Pour over the vegetable mixture and toss to coat. Transfer to a serving bowl and sprinkle with walnuts to serve.
