Lentil Burgers - cooking recipe

Ingredients
    2 oz dried red lentils
    1 None medium potato, roughly chopped
    1 oz frozen peas
    1/2 None small carrot, grated
    1/2 None small onion, grated
    1/2 cup dried breadcrumbs
    None None oil, for frying
Preparation
    Cook lentils in boiling water for 10 mins, or until tender. Drain.
    Meanwhile, boil, steam or microwave potato and peas, separately, until tender. Drain then mash together in a medium bowl.
    Add lentils, carrot, onion and 1/2 the breadcrumbs to potato mixture and mix to combine. Shape into 12 patties and coat with remaining breadcrumbs.
    Heat a little oil in a frying pan over low heat and cook burgers for 10 mins, or until browned on both sides and heated through.
